Have a Mung Bean Monday - vegan, vegetarian, macrobiotic, gluten free, recipe





Are those burdock chips?  Yes, they are, along with roasted turnips and a delicious mung bean sandwich. 

Mung beans are easy to cook.  They don't require soaking and are easier to digest than other beans.  Mung beans are cooling and detoxifying, but depending on how you cook them, they can be eaten any time of year. 

Burdock is such a powerhouse of cleaning out impurities and building strength, that I love finding new things to do with it.  Here I sliced strips and roasted them with olive oil and sea salt along with the turnips.  Unlike the turnips that will remain quite soft, the burdock got crisp.  I lucked out and got sweet burdock to begin with (thank you Sunrise Market) so the chips were better than potato chips and so much better for you.

Mung beans lend themselves to soups, burgers and stews, but can also be used like any other bean.  Here I mashed them along the mayo (veganaise actually) I had spread over the wrap, added water fried veggies and made a quick, filling sandwich I can't wait to have again.  High energy, great taste, and perfectly filling.

Healthy Pumpkin Muffins - vegan, vegetarian, macrobiotic, gluten free, recipe

Did you see that
organic pumpkin is currently only $2 at Whole Foods?  It's always only about that at Vitacost (save $10 with http://goo.gl/y6nNpa) and pumpkins just seem to be everywhere...

It's that time of year when I start thinking about pumpkin pie (recipe: http://susanmarque.blogspot.com/2012/11/healthy-thanksgiving-recipes-pumpkin.html)

or these wonderfully moist pumpkin muffins.  Just substitute gluten free flour if you must.

(remember if you are experiencing digestive issues and you've been told to stay away from gluten - that could be a lazy man's diagnosis for a real allergy to GMO's or a Candida issue.  Get a second opinion because there is nothing wrong with healthy organic whole grains and fresh flours.)And since barley has gluten, you might want to use rice syrup if you are Celiac. 


Pumpkin Muffins
Makes 12 muffins.

Dry ingredients:

1 ½ Cup Oat flour
1 ½ Cup Barley flour
¼ tsp. sea salt
1 ½ Tablespoon baking powder
1 tsp. Cinnamon
1 tsp. Nutmeg
¼ to ½ tsp. Clove

Wet ingredients:

2 Cups Pumpkin puree (usually 1 small pumpkin will yeild 2 Cups)
½ Cup Safflower or other vegetable oil
½ Cup Maple syrup
½ Cup Barley malt

optional: ½ Cup or more raisins

To make the pumpkin puree:
Cut the top of a baking pumpkin like you were making a jack-o-lantern.  Scoop out the seeds and replace the top.  Place in a 350° oven and bake for 1 hour or until the pumpin is soft inside.  Allow to cool and then scoop out the flesh of the pumpkin and place in a blender or food processor with a little water and blend to a puree.

For the muffins:  Preheat the oven to 350°.
Mix the dry ingredients in one bowl and the wet ingredients in another bowl.  Add the wet mixture to the dry mixture and stir just until all the flour is moistened.  Fold in the raisons.
Drop the batter into lined or oiled muffin tins and bake for 20 minutes.  The muffins will become golden in color and crack a bit when done.

Fatitude - The Truth Can Set You Slender

Working with clients can be tricky sometimes.  Humans can be resistant to letting go of the ideas that keep them stuck and frustrated and unhappy.  As I was talking with someone yesterday and hearing her fight to keep her limitations, I thought of how there used to be a term fat head that I believed described this type of attitude.  Fatitude, I thought.  The ideas that keep us stuck and living in that painful spot we want to get out of should be called fatitude.

When a person fights to be right with excuses, it literally keeps them stuck and there is a lot of overeating going on from that frustration.  Overeating or eating fattening items like fried foods, alcohol, ice cream, etc. are often outcomes of an attempt to sooth emotions.  We know this of course.  How do we take that idea and let go of fatitude and finally live free of unwanted overeating or pounds or anything?

Get to the truth of what is literally eating you.  If you have excuses as to why things are not working out, question those ideas.  Keep questioning until you can get to the underlying truth.  The truth will fell like an aha.  The truth might make you cry.  It might make your brain turn fuzzy and confused and you might even be unable to recall the realization that seemed so huge, so profound that you wanted to tell someone right away.  It's getting to those truths that will set your energy free and dissolve all the fatitude.  Then it gets easy to stick to your healthy eating goals.
