 That reminded me how many folks buy my Candida Free cookbook each week.  Sometimes this makes me happy, and other times I am saddened by the sheer numbers of people out there suffering.  One thing with Candida overgrowth is once it has happened, yes you can clear it, but I personally would never stop taking my preferred probiotics to keep the healthy flora flourishing.  Each body is a little different but many people think - "terrific, cleared that up and now I don't ever have to think of it again..."  That unfortunately is a recipe for it to absolutely keep flaring up over and over.  The best way to make sure it goes away is to be aware and take care of your precious gut because it is the seat of your health in general. That said - another of my favorite books - The Breakfast Cookbook came out of my love of all those lovely breakfast breads, puddings, cakes, pancakes etc...  This Amaranth bread is a terrific traveler.  I've taken it on those 20 hour flights and been happy to have it for two or even three days (by the third day it isn't as fresh but when in airports - it still makes me happy....) Last year on the way to a camping trip, the person I was staying with turned off the oven in the middle of cooking.  (He was wasted or something and somehow forgot I was making yummy bread...) I turned on the oven again and got it baked.  It was odd, but still okay, and I took it on the trip anyway, where if I hadn't, my choices were pretty scarce.  Re-toasted even over a fire works too.


Amaranth Studded Pan Bread

This soda bread is almost like a giant muffin in the way it is made.  Slice wedges and slather your favorite butter (carrot, onion, earth balance...) and your family or friends will be very satisfied.

1/2 Cup Amaranth, sorted
1 Cup water
small pinch of sea salt
1 1/2 Cups Spelt flour (gluten free folks - use your favorite combo)
1/2 Cup chestnut flour (not necessary to use chestnut but delicious)
1 1/2 tsp. baking powder
1/2  tsp. baking soda
1/2 tsp. sea salt
1 Tablespoon rice syrup
3 Tablespoons apple cider vinegar
6 Tablespoons vegetable oil
1 Cup rice or soy milk.

1. Bring the water and  pinch of salt to a boil and add the amaranth. 
2. Simmer for 20 minutes covered over a low flame.
3. Preheat your oven to 350°
4. Oil a 9” pie plate.
5.  Mix the dry ingredients in one bowl.
6. Mix the wet ingredients in another bowl.
7. Add the cooked amaranth to the wet ingredients.
8. Pour the wet ingredients into the dry ingredients and stir until mixed but not overmixed.
9. Bake for about 45 minutes until the bread is lightly brown, the top will crack a bit and you will be able to stick a knife in it and have it come out clean.

Variations:  Use what ever flours you choose.  Add herbs or nuts/seeds.  Make it your own.

The Time Excuse

If it's not money, it's usually time.  The excuse for why (you maybe) clients say they just can't eat healthy, or cook, or do any number of things.  No time....

Funny thing about intention - it seems to create more time....

Or not, if that is your intention.

In fact, you can organize your day so that cooking at home takes less time, not more.  I'm sure some of you have read or heard me talk about the guy I dated who like to eat fast food.  One day he wanted to come over and see me and he wanted to go through the drive through on his way.  Of course he was calling me from his car and was just about to his desired pick up place.  I said, bring it over and we'll eat together.  I started making my dinner as we hung up the phone and I was all set by the time he got to me about 15 or 20 minutes later...  He was a little envious of what I was having too, which eventually led him a few years later to ask me to coach him with food.  (After we were not dating anymore... some people need a little time to warm up to the idea of anti aging, healthy feasting...)

Once you recognize that you use a time excuse - for anything really - it's easy to shift that and just dive in and create more space for the things that are important, and less for oh Facebook, online shopping or that thing you do that is your time out moment that might be better use as a walk, a head stand or having a nice tall glass of homemade lemonade....

People don't argue with no time because everyone is pretty busy, and would not be surprised to find out that between carting your kids to school, your job and the rest of your life, that there isn't any time left for picking up groceries or actual cooking.  Wrong!  What if you picked up groceries after yoga by getting that mornings breakfast at Whole Foods (You'll see me with a small oatmeal and fruit or a mango/blueberry/spirulina smoothy), grabbing some staples and heading home.

Later that night you have everything you need to make any variety of things for dinner and feel good about how you fit everything in easily...

The Slenderizing Ice Cream

This is a picture of some homemade frozen yogurt actually.  I'm not saying that in particular is going to make you skinny, but it might make you happy... It was pretty good.

What will help you to stay slender, or get you there if your feeling there might too much of you pouring out of your bikini just now, is letting go of that scarcity thinking.  I almost always have some sort of ice cream (Usually it's the Coconut Bliss ones...when is that strawberry coming out in pints oh Coconut Bliss Gods????) in my freezer.  Often I have some cookies I've made, or at least the batter in the freezer, so I could have a cookie in just a few minutes.  To an old fashioned dieter, this sounds like a set up for a problem.  It's not.  It's the opposite. 

When your brain feels there is lack in food available, it tends to want you to eat more and store up.  I have had psychology people tell me there are names for that.   I knew one doctor who had every client buy enormous amounts of their personal trigger food.  It had to be some specific food that if you had it in the house, you would eat the whole bag.  You get to go and bring home so much abundance of that food, a funny thing happens.  Almost everyone would eat a bag or something and her rules were that when that happened you had to replace it immediately.

As soon as the replacement bag came into the home, the need to eat that food just went away.  It worked every time.   It was quite amazing to watch.  It's a scary thing to try.  If you are feeling fairly okay with food but might find yourself avoided something like ice cream.  Try having some around all the time instead of avoiding it.  Knowing that you can have it to enjoy at any time keeps that part of your brain calm, and then it is easy to enjoy a normal amount.  Then go on with your life and feel good that your looking better than ever, enjoying your cake, and ice cream too!

He's Not You - and other thoughts on how to give yourself a break

I was thinking about a handsome friend of mine this morning.  He used to be a bartender and knows how to enjoy a good cocktail or two.  I've caught him embarrassed in corners of buildings smoking a cigarette that he apologizes for, but he can't quite get his head around why I would choose a cookie over a delicious drink.

Part of the reason is purely physical.  He's stockier and muscular, think appealing yang guy.  I'm leaner, longer and far more yin.  Alcohol is yin.  Sweets are yin.  Drugs would be extreme yin.  (While I don't do the latter, there is a once month Advil or two...) When you go too far in either direction, yin or yang, the consequences are usually a problem. 

If I pile the yin on, I get sick, and often that includes horrible skin eruptions that take weeks to heal to where they are not noticed.  I'd rather sit out the drink and not suffer later.  Alcohol affects the liver.  The emotion of the liver is anger.  I'm so darn sensitive that it doesn't take much to also be suffering mood swings.  I like living calmer and having more fun and natural highs. (Like just getting near this guys sexy arms lets say...)

It's all a choice and we choose many times unconsciously to eat things that support our personal constitution and condition, or identity.  His constitution can handle alcohol better, and it can even be a tonic for his yangness, making him more relaxed and feeling better.  He isn't me and that is a good thing to keep in mind when we look at the choices others make.  Let go of the guilt, shame, blame and start being more curious as to why someone makes the choices they do.  In his case, his enjoyment also seems just as healthy as my abstinence.  If I change my condition, I might choose differently.  If you've been trying to get a friend to be more something or another, just be a healthy example and remember He/She's not you.

Gremolata for Everyday - Fast and Easy Recipes (gluten free, macrobiotic,flexitarian,vegetarian, vegan, pretty much anyone)

 You might be familiar with a gremolata (or gremolada) as a condiment on red meat.  It's actually a great way to add beauty and flavor to all sorts of meals, even ones without heavy protein.

Last night I bought a lovely wild caught Wahoo steak from Whole Foods.  Salmon or other fish would work equally as well.  I water fried chopped collard greens and fennel in a pan.  Removed the veggies, and then poached the fish in the same pan.
Meanwhile I made a gremolata to sprinkle on top of the hot fish.  It's simple to do, usually with parsley but I decided I wanted mint along with lime zest (usually lemon) and garlic.  Small amounts chopped fine and then sprinkled over.  You could always put gremolota on your meat and then grill it too.

So then there was about a Tablespoon left over that I used on a lovely salad today.  It was delicious with greens, carrots, avocado, pinto beans, raw fennel and an ume/olive oil dressing.
If you don't have a zester, don't worry.  You're gremolota is just as fast and easy using a sharp knife.
Peel a thin layer of the rind and lay flat on your cutting board.  Then slice fine strips in one direction then slice the opposite direction and do a general mincing.  Some people prefer a course chop, but I think a fine mince of all three ingredients is nice.  Let me know where your next gremolota goes... (I've even heard one brave soul put it on ice cream!)

Eat Clean - What Does That Mean - Discussion Continues

What is eating clean? Someone asked me the other day if "clean" eating included beer and wine.  "Sure." I said.  Really you can eat anything you like but if you want to feel clean, vibrant and full of life, then you have to consider what each thing you consume does for you.

Alcohol can certainly be part of a healthy lifestyle in moderation, and taking into account it's acid forming nature.  Unbalanced could mean too much, or just tipping your personal acid meter in the wrong direction where you'll be tired, cranky, prone to sickness, or in pain in some form unique to you.

Do you want to live in pain?  Even if yours is mostly moods and mind fog?  That is up to you.

Clean, refers to consuming the least amount of chemicals, additives and items that are just not supportive.  A glass of beer might be supportive to unwind, quench your thirst and be on the side of a plate of organic wholesome foods.  Personally, I choose dessert over alcohol. (As many of you know.) Some people have more leeway and their bodies balance the more extreme foods better than I do.  Most of us need to watch how we create balance.  It's too easy to tip into the pain realm by playing with too many fun foods all at once.  Being sick for a week because of one cocktail or brownie is no fun.  Something I've experimented with far too often.

Clean also isn't just tossing in a strong alkaline forming item for every acid forming one.  You can't balance the beer or cookie by eating an Umeboshi plum afterwards.  A side of kale doesn't cancel the wine.  If it worked like that there would be far less fatigue going around. 

There is actually a Clean Eating magazine that does a pretty good job of showcasing organic whole grains, vegetables, beans, sea vegetables, fruits, and small amounts of meats and fish.  I sometimes buy it along with TinHouse magazine for inspiration.

The key is always finding your personal balance.  Know your limits or what you are willing to put up with.  Keep the ingredients for Kudzu tea handy for days when you wake up knowing you went overboard the night before.
