What's Your Stuff?

Did you ever hear George Carlin's bit on "Stuff?"  He talks about how we like to accumulate stuff, own stuff, and then get bigger and bigger containers (homes) for our stuff.  Then go on vacation and take smaller versions of our homes with us feeling much better when we have our stuff.  I love when he says something about have you ever noticed that when you go visit someone else that their stuff is shit but your shit is stuff?  The way he puts it is so funny because we can relate.

It's the same thing with food.  Your food is good food and other people's food is often "yuck."  I remember the sadness I would have as a kid when brownies weren't fudgy like my moms or coleslaw had other things in it that I didn't want like macaroni.  There were plenty of good discoveries too.   Sweets I adored from homemade funnel cakes at the Boyum's house or mint chocolate bars someone always brought to gatherings. 

When I discovered that changing my diet could end my suffering, I had to let go a lot of what I thought was good and embrace foods I knew nothing about.  My tastes changed and soon the good stuff was very very different than what it used to be.  It worked well and I associated my new diet of whole grains, lots of veggies, beans I'd never eaten before and mild sweets with feeling terrific.  I gave myself enough time for the results to last.  There's no going back.  Slowly I see the world catching up but often folks want to justify the bad stuff as good or okay so they don't feel guilty about consuming it. 

What happens when you let go and experiment is that you see eating a little less can feel good.  Whole grains in the morning instead of hard dry cereal is far more energizing, or having the aches and fog disappear is better than any pastry.  Fun foods become a special treat instead of an every day right.

Play with how you see things and the way you see things can give you a whole new game.

And...........let's all have a sweet cool treat.

I love peach pie, peach cobbler or crisp but really it's just too hot to turn on the oven.  I thought this delicious fruit mousse might just fit the day better, with a cookie sprinkled on top perhaps for a pie effect.  (try the shortbread cookies from the cookbook, if you have some in your freezer... ;-) )


Peach Mousse

 

5-6 ripe organic peaches
2 C. apple juice/cider
2 T. agar flakes
pinch sea salt
juice of 1 lemon
a bit of cinnamon (optional)
1 heaping tsp. Kudzu dissolved in a little cold water
2 T. organic Hazelnut cream (nut butter and rice syrup may be substituted.

I buy the hazelnut cream from Goldmine Natural Foods 1-800-475-3663.  It comes from Italy and is a blend of hazelnuts and rice syrup.)


Cut the peaches into chunks and add to the apple juice in a saucepan.  Add the agar and stir occasionally over med/high heat.  Careful not to boil over.  Add the sea salt and lemon juice and when the agar has dissolved.  (about 5 minutes) Then add the kudzu while stirring constantly to avoid lumps.  When the mixture comes back up to a vigorous boil remove from heat and let cool.  Then when at least mostly cooled blend in a blender with the hazelnut cream.  Pour into a bowl to fully cool in the fridge or into individual  serving bowls.  Decorate with roasted almond or hazelnut pieces.
If a denser consistency is desired, omit some or all of the lemon or add more agar or both.

Break Up Cookies That Won't Weigh On You - vegan, macrobiotic, gluten free, sugar free, dairy free...


When the beautiful women of Step Up Women's Network first experienced these cookies, they dubbed them "The Break Up Cookies."  They are so low in calories, you could basically eat the whole batch and have it be less of a burden on your body than eating just a few Oreos.... The crispness helps get out some anger issues, and chocolate is always a welcome ingredient for self medication....especially in the love department.  

I like them anytime.  I used to make a hundred and take them to events, where everyone ate them up so fast I didn't have time to tell them why they are pretty healthy....

Lovely Lace Cookies
1 Cup Oat Flour
¼ tsp. sea salt
¼ Cup arrowroot powder
¼ Cup safflower oil
½ Cup Brown rice syrup
½ Cup maple syrup (or use all brown rice syrup)
1 tsp. vanilla extract

Sunspire grain sweetened chocolate chips for drizzling

Preheat your oven to 325°.
Mix the dry ingredients in a bowl
Mix the wet ingredients in another bowl
Pour the wet ingredients into the dry ingredients and mix well.  The batter will be on the thin side.  If it is runny just let it sit for several hours or overnight in the refrigerator.  This is normal depending on what flour is used.  It will thicken enough to place on the cookie sheet but not so that it can be broken off like other cookie dough.
Drop by teaspoonfuls onto parchment lined cookie sheets.  Leave plenty of room between cookies because they spread like crazy.
Bake about 15 minutes until edges are golden brown.

Melt chocolate chips in a pan over low heat, stirring continuously.  Drizzle over cookies.

To make ginger lace cookies add 1 tsp. ginger and ½ tsp. mace.
To make lemon or orange cookies use those extracts instead of the vanilla or in addition to it.
